Ingredienti impasto
4 uova x circa 240 g totali
15 g zucchero
10 g lievito di birra
225 g manitoba
80 g burro morbido a pezzi
5 g sale fino
Ingredienti bagna:
Scorza di arancia e limone senza la parte bianca
50 g miele (io non lo metto)
200 g zucchero semolato
500 g acqua
1 pizzico di cannella
1 chiodo di garofano
100 g Rum bianco
Per la finitura:
75 g marmellata di albicocche
25 g acqua
Preparazione:
Mettere nel boccale uova, zucchero e lievito 1 minuto v. 4.
Aggiungere la farina 2 minuti spiga.
Unire burro e sale 3 minuti spiga.
Mettere a lievitare 1 ora coperto con pellicola.
Imburrare ed infarinare 9 stampini x babà grandi.
Mettere l'impasto negli stampini fino a riempire a metà stampo e premere bene l' impasto con le mani inumidite x appiattirlo.
Far rilievitare finché raggiunge il bordo dello stampino.
Cuocere x 15 minuti nella parte bassa del forno a 190 gradi. (cuoce anche qualche minuto di meno).
Far raffreddare i babà.
Bagna:
Mettere ne boccale le scorze di agrumi, miele, zucchero, acqua, cannella e chiodo di garofano. Cuocere 10 min 80 gradi antiorario v. 1.
Aggiungere il rum bianco e lasciar raffreddare fino a che la temperatura sul bimby sia 50 gradi.
Inzuppre i babà x almeno 5 minuti.
Finitura:
Scaldare anche col microonde la marmellata con l'acqua e spennellare i babà per lucidarli.
